Ingredients

  • 2 cups Raw mixed nuts (almonds, pecans, walnuts, etc.)
  • 1 large Egg white
  • 1 tablespoon Water
  • 0.33 cup Granulated erythritol or monk fruit sweetener
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground cayenne pepper
  • 0.5 teaspoon Smoked paprika
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk together the egg white and water until frothy, about 1-2 minutes.

Step 3

Stir in the vanilla extract, then add the raw mixed nuts to the bowl. Toss the nuts until they are evenly coated with the egg white mixture.

Step 4

In a separate small bowl, mix together the erythritol or monk fruit sweetener, ground cinnamon, smoked paprika, cayenne pepper, and salt.

Step 5

Sprinkle the spice and sweetener mixture over the coated nuts and toss well until the nuts are fully and evenly coated.

Step 6

Spread the nuts out in a single layer on the prepared baking sheet.

Step 7

Bake the nuts for 15 minutes, then remove the tray from the oven and stir the nuts to ensure even cooking.

Step 8

Return the tray to the oven and bake for another 15 minutes, or until the nuts are golden and fragrant. Keep an eye on them to prevent burning.

Step 9

Remove the tray from the oven and allow the nuts to cool completely on the baking sheet. They will become crisp as they cool.

Step 10

Once cooled, transfer the nuts to an airtight container for storage. They can be kept at room temperature for up to 2 weeks.
