Ingredients

  • 3 medium beets
  • 1 tablespoon olive oil
  • 2 large garlic cloves
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons water
  • 1 tablespoon fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the beets thoroughly under running water to remove any dirt. Do not peel them yet.

Step 3

Wrap each beet loosely in aluminum foil and place them on a baking sheet.

Step 4

Roast the beets in the preheated oven for 45-60 minutes, or until they are fork-tender. The cooking time will vary depending on the size of the beets.

While the beets are roasting, peel the garlic cloves and set them aside.

Once the beets are roasted, remove them from the oven and let them cool for 10-15 minutes until they are easy to handle.
