Ingredients

  • 300 g Whole wheat flour
  • 100 g Almond flour
  • 2 tsp Baking powder
  • 200 ml Unsweetened applesauce
  • 150 ml Milk of choice (dairy or non-dairy)
  • 2 Eggs
  • 60 g Unsalted butter or coconut oil
  • 1 tsp Vanilla extract
  • 100 g Granulated erythritol or stevia granules (sugar substitute)
  • 1 tsp Ground cinnamon
  • 50 g Chopped nuts (e.g., almonds, hazelnuts) (optional)
  • 100 g Extra cold unsalted butter for streusel topping
  • 150 g Extra whole wheat flour for streusel topping
  • 50 g Extra granulated erythritol or stevia granules (for streusel topping)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9x13-inch (23x33 cm) baking pan or line it with parchment paper.

Step 2

In a large mixing bowl, combine the whole wheat flour, almond flour, and baking powder. Mix thoroughly to combine.

Step 3

In a separate bowl, whisk together the applesauce, milk, eggs, and vanilla extract until smooth. Add the sugar substitute and whisk again until fully combined.

Step 4

Slowly fold the wet mixture into the dry ingredients. Stir until a smooth batter forms.

Step 5

Pour the batter into the prepared baking pan and spread it out evenly using a spatula.

Step 6

To prepare the streusel topping, combine the extra cold butter, extra whole wheat flour, granulated sugar substitute, and cinnamon in a medium-sized bowl. Using your hands or a pastry cutter, mix until crumbly. If desired, add the chopped nuts for extra texture.

Step 7

Sprinkle the streusel topping evenly over the cake batter.

Step 8

Place the baking pan in the preheated oven and bake for 30-35 minutes, or until the cake is lightly golden and a toothpick inserted into the center comes out clean.

Step 9

Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it onto a wire rack to cool completely.

Step 10

Cut into 12 squares and serve. Enjoy with your favorite cup of coffee or tea!
