  • 100 g Unsalted butter (cold, cubed)

  • 200 g Fresh strawberries (hulled and chopped)
  • 10 g Chia seeds
  • 1 tsp Vanilla extract
  • 1 Egg (for egg wash, optional, can substitute with milk for vegetarian option)
  • 2 tbsp Almond milk (unsweetened, for brushing edges)
  • 1 pinch Salt

Directions

Step 1

In a large mixing bowl, combine the whole wheat pastry flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

Step 2

Stir in the Greek yogurt and mix until the dough comes together. Knead gently, then form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 20 minutes.

While the dough chills, prepare the filling. In a small saucepan over medium heat, combine the chopped strawberries and chia seeds.
