Ingredients

  • 1 pound Ground beef (85% lean or leaner)
  • 2 cups Green beans, trimmed and cut into 2-inch pieces
  • 3 tablespoons Coconut aminos (sugar-free soy sauce alternative)
  • 3 cloves Garlic, minced
  • 1 teaspoon Fresh ginger, grated
  • 2 teaspoons Sesame oil
  • 1 tablespoon Avocado oil (or other neutral cooking oil)
  • 0.25 teaspoon Crushed red pepper flakes (optional, for heat)
  • 0.5 teaspoon Sea salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat a large skillet or wok over medium-high heat. Add avocado oil and allow it to heat for about 30 seconds.

Step 2

Add the ground beef to the pan, breaking it apart with a wooden spoon or spatula. Cook for 5-7 minutes until browned and fully cooked through. Drain any excess fat, if necessary, and set aside the cooked beef in a separate bowl.

Step 3

In the same skillet, add the green beans and sesame oil. Stir-fry the green beans over medium-high heat for 4-5 minutes, or until they are bright green and tender-crisp.

Step 4

Reduce the heat to medium and stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant, being careful not to burn the garlic.

Step 5

Return the ground beef to the skillet with the green beans. Stir to combine.

Step 6

Add the coconut aminos, sea salt, black pepper, and crushed red pepper flakes (if using). Mix everything well to evenly coat the beef and green beans with the sauce.

Step 7

Cook everything together for 2-3 minutes, allowing the flavors to meld, then remove from heat.

Step 8

Serve immediately. This dish pairs well with cauliflower rice or can be enjoyed on its own for a low-carb meal.
