Ingredients

  • 200 grams Rice vermicelli
  • 1 medium, julienned Carrot
  • 100 grams, shredded Cabbage
  • 4 minced Garlic cloves
  • 3 thinly sliced Shallots
  • 2 beaten Eggs
  • 2 tablespoons Soy sauce (low-sodium)
  • 1 tablespoon Oyster sauce (sugar-free)
  • 1 teaspoon Sesame oil
  • 2 tablespoons Cooking oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 thinly sliced Scallions

Directions

Step 1

Place the rice vermicelli in a large bowl and cover with hot water. Soak for 5-7 minutes or until softened. Drain and set aside.

Step 2

Heat 1 tablespoon of cooking oil in a large wok or skillet over medium heat. Add beaten eggs and scramble until fully cooked. Remove from the wok and set aside.

Step 3

In the same wok, heat another tablespoon of cooking oil over medium-high heat. Add minced garlic and sliced shallots, then stir-fry until fragrant, about 1 minute.

Step 4

Add julienned carrot and shredded cabbage to the wok. Stir-fry for 2-3 minutes until slightly tender but still crisp.

Step 5

Push the vegetables to one side of the wok. Add the drained rice vermicelli to the other side. Drizzle soy sauce, oyster sauce, sesame oil, salt, and black pepper over the vermicelli. Toss to combine everything evenly.

Step 6

Add the scrambled eggs back into the wok and stir to mix thoroughly with the noodles and vegetables.

Step 7

Remove from heat and garnish with sliced scallions before serving.
