Ingredients

  • 250 grams All-purpose flour
  • 4 grams Instant yeast
  • 3 grams Baking powder
  • 15 milliliters Olive oil
  • 120 milliliters Non-dairy milk or water
  • 200 grams Pork shoulder, finely diced
  • 30 milliliters Soy sauce
  • 1 tablespoon Oyster sauce (sugar-free)
  • 1 teaspoon Sesame oil
  • 1 teaspoon Cornstarch
  • 2 teaspoons Water (for cornstarch slurry)
  • 2 cloves Minced garlic
  • 1 teaspoon Grated ginger
  • 2 stalks Green onions, finely chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon White pepper

Directions

Step 1

In a large mixing bowl, combine the flour, instant yeast, and baking powder. Gradually mix in the olive oil and non-dairy milk or water until the dough comes together.

Step 2

Knead the dough for 6-8 minutes on a floured surface until smooth and elastic. Cover the dough with a damp cloth and let it rest for 60-90 minutes, or until it doubles in size.

Step 3

While the dough is proofing, prepare the filling. Heat sesame oil in a skillet over medium heat. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.

Step 4

Add the diced pork to the skillet and cook until browned. Stir in the soy sauce, sugar-free oyster sauce, and white pepper. Mix well.

Step 5

Create a cornstarch slurry by combining the cornstarch with the water. Add the slurry to the pork mixture and mix until the sauce thickens. Remove from heat and stir in chopped green onions. Let the filling cool completely.

Step 6

Once the dough has risen, punch it down and divide it into 8 equal portions. Roll each portion into a ball, then flatten into a round disc about 10 cm in diameter.

Step 7

Spoon 1-2 tablespoons of filling into the center of the dough round. Pinch the edges together to seal the bun, ensuring the filling is enclosed. Place each bun seam-side down on a small square of parchment paper.

Step 8

Set up a steamer with boiling water and place the buns inside, ensuring there is enough space for them to expand. Cover and steam over high heat for 15-20 minutes.

Step 9

Carefully remove the steamed buns from the steamer and allow them to cool slightly before serving. Enjoy your sugar-free Char Siu Bao!
