Ingredients

  • 300 grams All-purpose flour
  • 6 grams Baking powder
  • 7 grams Instant yeast
  • 160 milliliters Warm water
  • 3 grams Salt
  • 15 milliliters Vegetable oil
  • 250 grams Ground pork
  • 15 milliliters Soy sauce (low-sodium)
  • 15 milliliters Oyster sauce (sugar-free)
  • 5 milliliters Sesame oil
  • 2 cloves Minced garlic
  • 5 grams Grated ginger
  • 15 grams Chopped green onions
  • 5 grams Cornstarch
  • 10 milliliters Water for cornstarch slurry

Directions

Step 1

In a large bowl, mix the all-purpose flour, baking powder, instant yeast, and salt together.

Step 2

Gradually add in the warm water and vegetable oil while stirring, until the dough starts to come together.

Step 3

Knead the dough on a lightly floured surface for 8-10 minutes, or until it forms a smooth, elastic ball.

Step 4

Place the dough in a lightly oiled bowl, cover it with a damp towel, and let it rise in a warm area for about 1 hour, or until doubled in size.

Step 5

Meanwhile, prepare the filling. In a bowl, combine the ground pork, soy sauce, sugar-free oyster sauce, sesame oil, minced garlic, grated ginger, and chopped green onions.

Step 6

Mix well until all the ingredients are evenly incorporated. Set aside.

Step 7

In a small dish, mix the cornstarch and 10 milliliters of water to create a slurry. Add this to the pork mixture to bind the filling and keep it juicy.

Step 8

Once the dough has risen, punch it down and divide it into 8 equal portions. Roll each portion into a ball, then flatten it into a circle about 10-12 centimeters in diameter.

Step 9

Place a tablespoon of pork filling in the center of each dough circle. Gather the edges of the dough, pleating as you go, and pinch them together at the top to seal the bun.

Step 10

Place each bun on a small piece of parchment paper to prevent sticking during steaming.

Step 11

Allow the assembled buns to rest for 15 minutes before steaming to let them rise slightly.

Step 12

Prepare a steamer and bring water to a boil. Arrange the buns in the steamer, making sure they are spaced apart as they will expand during cooking.

Step 13

Steam the buns for 12-15 minutes over medium-high heat.

Step 14

Carefully remove the buns from the steamer and let them cool slightly before serving. Enjoy your sugar-free steamed pork buns!
