Ingredients

  • 1 cup Gram flour (besan)
  • 2 tablespoons Semolina (rava), optional for extra fluffiness
  • 1 cup Plain yogurt (curd)
  • 0.5 cup Water
  • 0.5 teaspoon Ginger paste
  • 0.5 teaspoon Green chili paste
  • 0.25 teaspoon Baking soda
  • 1 teaspoon Salt
  • 0.25 teaspoon Turmeric powder
  • 1 teaspoon Eno (fruit salt)
  • 1 teaspoon Cooking oil
  • 1 teaspoon Mustard seeds
  • 8 pieces Curry leaves
  • 0.5 teaspoon Sesame seeds
  • 1 teaspoon Lemon juice
  • 2 tablespoons Fresh coriander leaves (optional, for garnish)
  • 2 tablespoons Green chutney (optional, for serving)

Directions

Step 1

In a mixing bowl, combine gram flour, semolina (if using), salt, turmeric powder, ginger paste, and green chili paste.

Step 2

Whisk in yogurt and water to form a smooth, lump-free batter. The batter should be of medium consistency (not too thick or too runny). Let it rest for 5-10 minutes.

Step 3

Prepare a steamer by adding water and bringing it to a boil. Grease a round steaming plate or cake tin with oil.

Step 4

Right before steaming, mix baking soda and lemon juice into the batter, followed by eno. Stir gently in one direction to activate the leavening agents. The batter will become frothy and rise slightly.

Step 5

Pour the batter immediately into the greased plate or tin, spreading it evenly.

Step 6

Place the plate/tin in the steamer and steam on medium heat for 15-20 minutes, or until a toothpick inserted in the center comes out clean.

Step 7

Once done, remove the plate/tin from the steamer and allow it to cool slightly before slicing the dhokla into squares or diamonds.

Step 8

For tempering, heat oil in a small pan. Add mustard seeds and let them splutter. Add curry leaves and sesame seeds, sautéing for a few seconds.

Step 9

Pour the tempering evenly over the sliced dhokla.

Step 10

Garnish with fresh coriander leaves if desired. Serve warm with green chutney.
