Ingredients

  • 300 g All-purpose flour
  • 7 g Instant yeast
  • 1 tsp Baking powder
  • 150 ml Warm water
  • 2 tbsp Vegetable oil
  • 300 g Ground pork
  • 2 tbsp Soy sauce (sugar-free)
  • 1 tbsp Oyster sauce (sugar-free)
  • 1 tsp Sesame oil
  • 2 cloves Garlic, minced
  • 1 tsp Fresh ginger, grated
  • 2 stalks Green onions, finely chopped
  • 1 tbsp Cornstarch
  • 2 tbsp Water (for filling mixture)
  • 12 pieces Parchment paper, cut into small squares

Directions

Step 1

In a large mixing bowl, combine the flour, instant yeast, and baking powder. Mix well to evenly distribute the dry ingredients.

Step 2

Gradually add the warm water while stirring the mixture to form a dough. Add the vegetable oil and knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.

Step 3

Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise for 1 hour or until it doubles in size.

Step 4

While the dough is resting, prepare the filling. In a bowl, combine the ground pork, soy sauce, oyster sauce, sesame oil, minced garlic, grated ginger, green onions, cornstarch, and 2 tablespoons of water. Mix until well combined and sticky.

Step 5

Once the dough has risen, punch it down and knead for about 2 minutes. Divide the dough into 12 equal portions and roll each portion into a ball.

Step 6

Flatten each dough ball into a small circle, about 4 inches in diameter, keeping the edges thinner than the center.

Step 7

Place about 1 tablespoon of the pork filling in the center of the dough circle. Pinch the edges of the dough together to seal it, forming a bao shape. Place each bun seam-side down on a square of parchment paper.

Step 8

Allow the filled buns to rest for 15 minutes, covered with a kitchen towel, while you prepare your steamer.

Step 9

Arrange the buns in your steamer, ensuring they’re not touching to allow room for expansion. Steam the bao buns over medium heat for 12-15 minutes.

Step 10

Carefully remove the steamed buns from the steamer and let them cool slightly before serving.

Step 11

Serve warm and enjoy your sugar-free steamed bao buns with savory pork filling!
