Ingredients

  • 250 g Rice noodles (or gluten-free noodles)
  • 2 tbsp Sesame oil
  • 4 cloves Garlic cloves, minced
  • 1 tbsp Fresh ginger, grated
  • 1 tsp Red chili flakes
  • 3 tbsp Low-sodium soy sauce or tamari
  • 1 tbsp Rice vinegar
  • 1.5 tbsp Chili garlic sauce (sugar-free)
  • 1 tbsp Lime juice, freshly squeezed
  • 2 Green onions, thinly sliced
  • 2 tbsp Cilantro, chopped (optional)
  • 1 tbsp Sesame seeds (for garnish)

Directions

Step 1

Cook the rice noodles according to the packaging instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Step 2

In a large skillet or wok, heat the sesame oil over medium heat.

Step 3

Add the minced garlic and grated ginger to the skillet. Sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.

Step 4

Stir in the red chili flakes, low-sodium soy sauce or tamari, rice vinegar, chili garlic sauce, and lime juice. Mix well to combine, creating a spicy garlic chili sauce.

Step 5

Add the cooked and drained noodles to the skillet. Toss gently to coat the noodles evenly in the sauce.

Step 6

Cook for another 2-3 minutes, stirring occasionally, until the noodles are heated through.

Step 7

Remove the skillet from the heat and garnish the noodles with sliced green onions, chopped cilantro (if using), and sesame seeds.

Step 8

Serve immediately and enjoy your sugar-free spicy garlic chili noodles!
