Ingredients

  • 200 grams Almond flour
  • 100 grams Whole wheat flour
  • 80 grams Unsweetened erythritol
  • 100 grams Unsalted butter (cold, cubed)
  • 1 large Egg
  • 2 tablespoons Milk (or plant-based milk for dairy-free option)
  • 1.5 teaspoons Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 0.5 teaspoons Ground cloves
  • 0.5 teaspoons Ground ginger
  • 0.5 teaspoons Ground cardamom
  • 0.25 teaspoons Salt
  • 0.5 teaspoons Baking powder

Directions

Step 1

In a large mixing bowl, combine the almond flour, whole wheat flour, unsweetened erythritol, cinnamon, nutmeg, cloves, ginger, cardamom, salt, and baking powder. Stir well to incorporate the spices evenly.

Step 2

Add the cold, cubed butter to the bowl. Using your fingertips or a pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 3

In a small bowl, whisk together the egg and milk (or plant-based milk if making a dairy-free version). Pour this mixture into the dry ingredients and stir until a dough begins to form.

Step 4

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour. This allows the dough to firm up for easier handling.

Step 5

Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

Step 6

On a lightly floured surface, roll out the chilled dough to a thickness of about 0.5 cm (1/4 inch). Use cookie cutters to cut the dough into desired shapes, or shape into traditional rectangular pieces for classic Speculaas cookies.

Step 7

Place the shaped cookies onto the prepared baking sheet, leaving a small gap between each cookie.

Step 8

Bake in the preheated oven for 12-15 minutes, or until the cookies are lightly golden around the edges.

Step 9

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Store the cooled cookies in an airtight container for up to 1 week. Enjoy with a warm beverage!
