  • 6 ears Fresh corn on the cob
  • 4 tablespoons Unsalted butter
  • 4 slices Bacon
  • 1 medium Yellow onion, finely diced

  • 0.5 teaspoons Black pepper
  • 0.25 cups Water

Directions

Step 1

Shuck the corn and remove all silk strands. Using a sharp knife, carefully slice the kernels off each cob into a large bowl. Then, using the back of the knife, scrape the cob to extract the creamy corn 'milk' into the same bowl. Set aside.

In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain. Once cooled, crumble the bacon and set aside. Leave about 2 tablespoons of bacon grease in the skillet.

To the skillet with bacon grease, add the unsalted butter and melt it over medium heat.
