Wash and peel the bottle gourd (sorakkai) and chop it into small cubes.
Heat 1 teaspoon of oil in a pan over medium heat. Add the urad dal and roast it until golden brown. Remove and set aside.
In the same pan, add the chopped bottle gourd, green chilies, ginger, and curry leaves. Sauté them for 3-4 minutes until the bottle gourd softens slightly.
Add the grated coconut and tamarind to the sautéed mixture. Stir well and cook for another 2 minutes. Turn off the heat and let it cool down slightly.
Transfer the mixture to a blender, add the roasted urad dal and salt, and blend until smooth. Add water gradually to achieve the desired consistency.
For the tempering, heat the remaining 1 teaspoon of oil in a small pan. Add mustard seeds and let them splutter. Then add the dry red chili and fry for a few seconds. Pour the tempering over the chutney.
Serve the sugar-free sorakkai chutney with idlis, dosas, or rice.
