Ingredients

  • 2 whole Large aubergines (eggplants)
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves
  • 2 tablespoons Tahini
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Pierce the aubergines several times with a fork. Rub them lightly with 1 tablespoon of olive oil.

Step 3

Place the aubergines on a baking sheet and roast in the preheated oven for about 35-40 minutes, or until the skin is charred and the flesh is soft.

While the aubergines are roasting, finely chop the garlic cloves and parsley. Set aside.

Once roasted, remove the aubergines from the oven and let them cool for about 10 minutes.
