  • 1 tablespoon Garlic powder
  • 1 tablespoon Onion powder
  • 1 teaspoon Black pepper
  • 1 teaspoon Salt
  • 1 teaspoon Ground cumin
  • 2 tablespoons Olive oil
  • 1 cup Apple cider vinegar
  • 2 cups Low-sodium beef stock
  • 4 pieces Whole grain sandwich buns
  • 4 pieces Lettuce leaves
  • 8 slices Tomato slices

Directions

Step 1

Trim excess fat from the brisket and pat it dry with paper towels.

Step 2

In a small bowl, combine smoked paprika, garlic powder, onion powder, black pepper, salt, and ground cumin.

Step 3

Rub the spice mixture evenly over the entire brisket.

Step 4

Heat olive oil in a large skillet over medium-high heat. Sear the brisket on both sides until browned, about 4-5 minutes per side.

Transfer the seared brisket to a slow cooker.

Step 6

Pour apple cider vinegar and beef stock over the brisket in the slow cooker.

Step 7

Cover and cook on low for 6-8 hours, or until the brisket is tender and easily shredded with a fork.

Step 8

Once cooked, remove the brisket from the slow cooker and let it rest for 15 minutes before shredding it with two forks.

Step 9

To assemble the sandwiches, place a generous amount of shredded brisket on the bottom half of each whole grain sandwich bun.

Step 10

Top with a lettuce leaf and two slices of tomato.

Step 11

Cover with the top half of the bun and serve immediately.
