Directions

Step 1

Start by patting the beef chuck roast dry using paper towels. Season it generously with salt, ground black pepper, and paprika on all sides.

In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Once the oil is shimmering, add the beef chuck roast and sear it on all sides until deeply browned. This should take about 4-5 minutes per side.
