Ingredients

  • 1 cup semolina (sooji)
  • 0.5 cup ghee
  • 2 cups water
  • 1 cup milk
  • 0.5 cup dates, pitted and chopped
  • 0.25 cup raisins
  • 0.5 teaspoon cardamom powder
  • 1 pinch saffron strands
  • 0.25 cup chopped mixed nuts (cashews, almonds, pistachios)
  • 1 pinch salt

Directions

Step 1

In a saucepan, add water and milk together and bring them to a light simmer over medium heat. Add saffron strands and let them steep while preparing the other ingredients.

Step 2

In a large, heavy-bottomed pan, melt ghee over medium heat. Add semolina and roast it, stirring continuously until it turns golden brown and releases a nutty aroma. This should take about 8-10 minutes.

While the semolina is roasting, chop the dates finely to ensure they blend smoothly into the dessert.

Once the semolina is roasted, carefully add the hot milk and saffron mixture, stirring constantly to prevent lumps from forming. Be cautious, as the mixture may splatter.
