Ingredients

  • 500 grams Chicken intestines
  • 400 milliliters Coconut milk
  • 500 milliliters Water
  • 2 teaspoons Turmeric
  • 1 tablespoon Ginger, minced
  • 3 cloves Garlic, minced
  • 5 Shallots, thinly sliced
  • 3 Kaffir lime leaves
  • 2 stalks Lemongrass, bruised
  • 3 Red chili peppers, sliced
  • 100 grams Green beans, cut into 2-inch pieces
  • 100 grams Carrots, sliced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Cooking oil
  • 2 Bay leaves

Directions

Step 1

Thoroughly clean the chicken intestines under running water, then let them drain.

Step 2

In a large pot, bring 500 milliliters of water to boil. Add chicken intestines and boil for 10 minutes. Drain and set aside.

Step 3

In a large pan, heat 2 tablespoons of cooking oil over medium heat. Add the minced garlic, ginger, and sliced shallots. Sauté until fragrant, about 3 minutes.

Step 4

Add the bruised lemongrass, kaffir lime leaves, bay leaves, turmeric, and sliced red chili peppers to the pan. Cook for another 2 minutes until the spices release their aroma.

Add the boiled chicken intestines to the pan and stir well to coat them with the spice mixture.

Pour in the coconut milk and stir to combine. Bring the mixture to a gentle simmer.
