  • 1 cup Brown rice
  • 2 cups Water
  • 1 tablespoon Olive oil

  • 1 medium Bell pepper, diced
  • 1 cup Mushrooms, finely chopped
  • 1 cup Black beans, drained and rinsed
  • 2 large Eggs, beaten
  • 0.5 cup Parmesan cheese, grated
  • 0.25 cup Chopped fresh parsley
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Paprika

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.

Step 2

In a medium saucepan, combine the brown rice and water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 30-35 minutes until the rice is cooked and the water is absorbed. Set aside to cool slightly.
