Ingredients

  • 16 whole Cremini mushrooms
  • 2 tablespoons Olive oil
  • 1 small, finely chopped Onion
  • 2 cloves, minced Garlic
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 ounces Cream cheese
  • 0.25 cup, grated Parmesan cheese
  • 2 tablespoons, chopped Chives

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the mushrooms and remove the stems. Reserve the caps and chop the stems finely.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and cook for about 3 minutes until translucent.

Step 4

Add the chopped mushroom stems and garlic to the skillet. Cook for another 4 minutes until the moisture has mostly evaporated.

Step 5

Stir in the thyme leaves, salt, and black pepper, and cook for 1 additional minute. Remove the skillet from the heat.

Step 6

In a mixing bowl, combine the cooked mushroom mixture with cream cheese and Parmesan cheese until well blended.

Step 7

Place the mushroom caps on a baking sheet lined with parchment paper. Brush the caps with the remaining olive oil.
