Ingredients

  • 500 grams ground beef
  • 250 grams ground pork
  • 1 medium, finely chopped onion
  • 3 cloves, minced garlic
  • 1 large, grated carrot
  • 1 finely chopped celery stalk
  • 100 grams, fresh, chopped spinach
  • 1 large egg
  • 50 grams almond flour
  • 2 tablespoons, fresh, chopped parsley
  • 1 teaspoon, dried thyme
  • 0.5 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

In a skillet, heat olive oil over medium heat. Add the onions, garlic, carrot, and celery. Sauté until the vegetables are soft, about 5 minutes. Remove from heat and let cool slightly.

Step 3

In a large mixing bowl, combine ground beef, ground pork, sautéed vegetables, spinach, egg, almond flour, parsley, thyme, salt, and black pepper. Mix until well incorporated.

Step 4

Transfer the meat mixture onto a large piece of parchment paper and shape it into a log approximately 12 inches long.

Carefully roll the parchment around the meat log, tucking the ends underneath to secure it. Place the wrapped meat roll on a baking sheet seam-side down.

Bake in the preheated oven for 45 minutes, or until the meat is cooked through and an internal thermometer reads 70°C (160°F).
