Ingredients

  • 2 tablespoons olive oil
  • 500 grams beef sirloin, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups baby spinach leaves
  • 4 large whole wheat tortillas
  • 1 medium avocado, sliced
  • 1 medium lime, cut into wedges

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 2

Add the sliced beef sirloin to the skillet and cook for 4-5 minutes until browned. Remove beef from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the onion and red bell pepper, and sauté for about 5 minutes until they are softened.

Step 4

Stir in the minced garlic, smoked paprika, and ground cumin. Cook for 1 more minute until fragrant.

Return the cooked beef to the skillet. Add salt and black pepper, stirring well to combine all ingredients. Cook for another 2-3 minutes to heat through.

Warm the whole wheat tortillas in a dry skillet or directly over the flame for a few seconds on each side until pliable.
