Ingredients

  • 500 grams chicken breast
  • 2 stalks lemongrass, finely chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 2 cloves fresh garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons lime juice
  • 3 tablespoons coconut aminos
  • 1 teaspoon salt
  • 2 tablespoons coconut oil, melted
  • 100 grams natural peanut butter (no added sugar)
  • 100 milliliters coconut milk
  • 1 unit red chili, finely chopped (optional)
  • 50 milliliters water
  • 12 units wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent them from burning during cooking.

Step 2

Cut the chicken breast into small cubes, about 2cm each, and set aside.

Step 3

In a large bowl, mix together the lemongrass, ground coriander, turmeric powder, cumin powder, minced garlic, grated ginger, lime juice, coconut aminos, salt, and 1 tablespoon of melted coconut oil. Add the chicken cubes and coat them evenly with the marinade.

Cover the bowl and let the chicken marinate in the fridge for at least 30 minutes to absorb the flavors.

Thread the marinated chicken pieces onto the soaked wooden skewers, dividing them equally.
