  • 150 grams Unsalted butter

  • 20 grams Cocoa powder
  • 6 large Egg whites
  • 150 grams Apricot preserves (sugar-free)
  • 100 milliliters Water
  • 50 grams Additional erythritol (for glaze)

Directions

Step 1

Preheat the oven to 180°C (350°F). Grease and line a 9-inch round cake pan with parchment paper.

Step 2

Melt the sugar-free dark chocolate in a heatproof bowl over a pot of simmering water, ensuring the bowl does not touch the water. Stir until smooth, then remove from heat.

In a separate bowl, beat the unsalted butter and erythritol with an electric mixer until light and fluffy.

Add the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.
