Ingredients

  • 1 medium head Red cabbage
  • 60 ml Apple cider vinegar
  • 1 large Apple
  • 1 medium Onion
  • 2 tablespoons Olive oil
  • 4 whole Cloves
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 250 ml Water

Directions

Step 1

Remove the outer leaves of the red cabbage, then cut the cabbage into quarters. Remove the core and slice the cabbage into thin strips.

Step 2

Peel the onion and chop it finely.

Step 3

Peel, core, and grate the apple.

Step 4

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent and fragrant, about 5 minutes.

Step 5

Add the grated apple to the pot and stir well to combine with the onion.

Step 6

Add the sliced cabbage to the pot and stir to coat with the oil, onion, and apple mixture.

Step 7

Pour in the apple cider vinegar and water, stirring everything together.

Step 8

Add the cloves, bay leaf, salt, and black pepper to the pot. Stir to ensure the spices are distributed evenly.

Step 9

Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot with a lid and cook for about 45-60 minutes or until the cabbage is tender, stirring occasionally to prevent sticking.

Step 10

Once the cabbage is tender and well-cooked, adjust the seasoning with more salt and pepper if necessary. Remove the cloves and bay leaf before serving.

Step 11

Serve the sugar-free rotkraut warm as a side dish to your favorite main course.
