Ingredients

  • 4 large Red bell peppers
  • 2 whole Garlic cloves
  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Smoked paprika

Directions

Step 1

Preheat your oven to 450°F (232°C).

Step 2

Rinse the red bell peppers thoroughly under cold water. Pat them dry with a kitchen towel.

Step 3

Place the red bell peppers on a baking sheet lined with aluminum foil or parchment paper.

Step 4

Roast the red bell peppers in the preheated oven for about 25-30 minutes, turning occasionally, until the skin is charred and blistered on all sides.

Step 5

While the peppers are roasting, peel the garlic cloves and place them in a small oven-safe dish. Add 1 tablespoon of olive oil and cover the dish with foil.

Step 6

Place the garlic in the oven during the last 10 minutes of roasting the peppers.

Once the peppers are roasted, remove them from the oven and transfer them to a bowl. Cover the bowl with plastic wrap or a lid and let them steam for about 10 minutes. This will make peeling the skin easier.

Peel the charred skin from the peppers and remove the seeds and stems. Discard the skin, seeds, and stems.

Add the roasted garlic, the remaining 1 tablespoon of olive oil, lemon juice, salt, black pepper, and smoked paprika to the blender.
