Ingredients

  • 100 grams pearl barley
  • 2 liters water
  • 1 whole lemon
  • 1 whole lime
  • 10 leaves fresh mint leaves
  • 10 grams fresh ginger
  • 1 teaspoon stevia (optional)

Directions

Step 1

Rinse the pearl barley under cold running water to remove any dust or impurities. Drain well.

Step 2

In a large pot, combine the rinsed barley with 2 liters of water. Bring to a boil over high heat.

Step 3

Once boiling, reduce the heat to low and let it simmer for 45 minutes or until the barley is tender.

Step 4

While the barley is cooking, wash and slice the lemon and lime. Also, peel and slice the fresh ginger.

Step 5

Once the barley is cooked, strain the liquid into a large heatproof bowl or pitcher. Discard the barley or save it for another recipe.

Step 6

Add the lemon slices, lime slices, fresh ginger slices, and fresh mint leaves to the barley water.

Step 7

Stir the mixture well and allow it to sit at room temperature for at least one hour to enhance the flavors. You can also refrigerate it for a cooler drink.

Step 8

Before serving, taste the barley water. If you wish for it to be sweeter, add a teaspoon of stevia.
