Ingredients

  • 100 grams Pearl barley
  • 1.5 liters Water
  • 4 tablespoons Fresh lemon juice
  • 10 leaves Fresh mint leaves
  • 0.5 medium Cucumber
  • 1 inch piece Ginger root

Directions

Step 1

Rinse the pearl barley thoroughly under cold running water to remove any debris or excess starch.

Step 2

In a large pot, combine the rinsed barley and 1.5 liters of water. Bring to a boil over high heat.

Step 3

Once boiling, reduce the heat to low, cover, and let simmer for about 45 minutes or until the barley is tender.

Step 4

While the barley is cooking, peel and thinly slice the ginger root. Set aside.

Step 5

Wash the cucumber. If desired, peel the skin off. Slice the cucumber thinly and set aside.

Step 6

Once the barley is cooked, strain it using a fine mesh sieve or cheesecloth, collecting the barley water in a large heatproof bowl. You can reserve the cooked barley for another use.

Allow the barley water to cool to room temperature.

Once cooled, add the sliced ginger, cucumber, fresh mint leaves, and lemon juice to the barley water.
