Ingredients

  • 100 grams Sun-dried tomatoes (no added sugar)

  • 50 grams Parmesan cheese, grated
  • 2 pieces Garlic cloves
  • 120 milliliters Extra virgin olive oil
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

If using sun-dried tomatoes that are not packed in oil, soak them in warm water for about 10 minutes until they soften. Drain thoroughly before use.

Step 2

In a skillet over medium heat, lightly toast the pine nuts until they are golden brown, stirring frequently to prevent burning. Remove from heat and let them cool.

Peel the garlic cloves and roughly chop them to make blending easier.
