  • 4 whole medium red beets
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 whole garlic cloves
  • 2 tablespoons tahini
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh dill (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Trim the tops and roots of the beets and scrub them clean under running water.

Step 3

Wrap each beet individually in aluminum foil and place them on a baking sheet.

Roast the beets in the preheated oven for 45 minutes or until a knife can easily pierce through them.

Once cooked, remove the beets from the oven and allow them to cool slightly until they are comfortable to handle.
