Ingredients

  • 2 cups all-purpose flour
  • 3 pieces large eggs
  • 2 tablespoons water
  • 0.25 teaspoons salt
  • 1 cup ricotta cheese
  • 0.5 cup grated Parmesan cheese
  • 1 cup spinach, chopped and cooked
  • 2 tablespoons fresh basil, chopped
  • 28 ounces crushed tomatoes
  • 2 tablespoons olive oil
  • 3 pieces garlic cloves, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoons ground black pepper
  • 0.25 teaspoons red pepper flakes
  • 0.25 cup grated Parmesan cheese, for garnish

Directions

Step 1

In a bowl, mix all-purpose flour and salt. Create a well in the center and add the eggs and water into it. Mix the ingredients until they form a dough.

Step 2

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Wrap the dough in plastic wrap and allow it to rest at room temperature for 30 minutes.

While the dough rests, prepare the ravioli filling. In a bowl, mix ricotta cheese, grated Parmesan, cooked spinach, and basil until well combined. Set this aside.

To make the tomato sauce, heat olive oil in a saucepan over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
