Ingredients

  • 1 pack sugar-free puff pastry sheets
  • 8 oz cream cheese, softened
  • 0.5 cup sugar substitute (like erythritol or stevia)
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup fresh raspberries
  • 1 tsp lemon zest
  • 2 tbsp sugar-free apricot jam
  • 1 tbsp water

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll out the sugar-free puff pastry and cut it into six equal rectangles.
