Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 2 large Eggs
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Chopped fresh parsley
  • 0.5 cup Onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 0.5 cup Crumbled feta cheese
  • 0.5 cup Whole wheat breadcrumbs
  • 2 tablespoons Olive oil

Directions

Step 1

Rinse the quinoa under cold water using a fine mesh strainer. In a medium saucepan, bring the 2 cups of water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the quinoa is tender and the water has been absorbed. Let it cool slightly.

Step 2

In a large bowl, beat the eggs and season with salt and pepper. Stir in the cooked quinoa, chopped parsley, onion, and garlic until well combined.

Add the crumbled feta cheese and breadcrumbs to the quinoa mixture, and stir until all the ingredients are evenly distributed.
