Ingredients

  • 6 large egg yolks
  • 100 grams unsweetened shredded coconut
  • 80 grams granulated erythritol
  • 200 milliliters coconut milk
  • 30 grams unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 pinch pinch of salt

Directions

Step 1

Preheat your oven to 180°C (350°F). Lightly grease individual muffin tins or a quindim mold with butter.

In a large mixing bowl, gently whisk the egg yolks until smooth, being careful not to introduce too much air.

Add the granulated erythritol to the egg yolks and continue to whisk until the erythritol is thoroughly mixed.

Stir in the melted butter, coconut milk, vanilla extract, and a pinch of salt. Mix well to combine.
