Ingredients

  • 2 kg quinces
  • 1 large lemon
  • 500 ml water
  • 2 teaspoons liquid stevia

Directions

Step 1

Begin by washing the quinces thoroughly under running water to remove any dirt or fuzz on their skin.

Step 2

Peel the quinces using a vegetable peeler and then core them, removing all seeds. Cut the quinces into small chunks.

Step 3

Juice the lemon and set the juice aside.

Step 4

In a large, heavy-bottomed saucepan, add the quince chunks and pour the water over them.

Step 5

Bring the saucepan to a simmer over medium heat. Cook the quinces for about 45 minutes, or until they are tender and can easily be mashed.

Step 6

Once tender, use a potato masher or an immersion blender to puree the mixture directly in the pot until it reaches the desired jam consistency.

Step 7

Stir in the lemon juice and liquid stevia. Adjust the sweetness by adding more stevia to taste if needed.

Step 8

Continue to simmer the mixture on low to medium heat for another 60 minutes, stirring occasionally to prevent sticking, until the jam thickens.

Step 9

To test if the jam is ready, place a small spoonful on a chilled plate. It should hold its shape and not be runny.

Step 10

Once the desired consistency is achieved, remove the saucepan from the heat and let the jam cool slightly.

Step 11

While still warm, transfer the quince jam into sterilized jars, leaving a small space at the top. Seal the jars tightly.

Step 12

Let the jam cool at room temperature before storing it in the refrigerator, where it will keep for up to three weeks.
