Ingredients

  • 2 tablespoons Extra-virgin olive oil
  • 4 Garlic cloves, minced

  • 6 pieces Anchovy fillets, rinsed and chopped
  • 2 tablespoons Tomato paste
  • 28 ounces Crushed tomatoes, canned, no added sugar
  • 0.5 cup Kalamata olives, pitted and chopped
  • 2 tablespoons Capers, rinsed and drained
  • 1 teaspoon Dried oregano
  • 0.25 cup Fresh basil, chopped
  • 0.25 teaspoon Black pepper, freshly ground

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the minced garlic and red pepper flakes to the skillet and sauté for about 1-2 minutes, or until the garlic is golden and fragrant.

Step 3

Stir in the chopped anchovy fillets and sauté for another minute until the anchovies have dissolved into the oil.

Step 4

Add the tomato paste and mix well, cooking for about 2 minutes to allow the paste to caramelize slightly.
