Ingredients

  • 2 cups Almond flour
  • 0.5 cup Pumpkin puree
  • 0.5 cup Butter, softened
  • 0.75 cup Sugar-free sweetener (such as erythritol or monk fruit)
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, cream together the softened butter and sugar-free sweetener until the mixture is light and fluffy.

Step 3

Add in the egg, pumpkin puree, and vanilla extract. Mix until well combined.

Step 4

In a separate bowl, whisk together the almond flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.

Step 5

Gradually add the dry mixture into the wet ingredients, mixing until a dough forms. Ensure the ingredients are well integrated, but don't overmix.

Step 6

Using a small cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheet, leaving about 2 inches between each cookie for spreading.

Step 7

Gently press each dough ball to flatten slightly.

Step 8

Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden.

Step 9

Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
