Ingredients

  • 2 cups Almond flour
  • 2 teaspoons Baking powder
  • 2 teaspoons Pumpkin pie spice
  • 0.5 teaspoons Salt
  • 3 large Eggs
  • 1 cup Pumpkin puree (canned or fresh)
  • 1 teaspoon Vanilla extract
  • 0.5 cup Unsweetened almond milk
  • 1 teaspoon Liquid stevia
  • 0.25 cup Coconut oil

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a donut pan with coconut oil.

Step 2

In a large mixing bowl, whisk together the almond flour, baking powder, pumpkin pie spice, and salt until well combined.

Step 3

In another bowl, beat the eggs until frothy, then add in the pumpkin puree, vanilla extract, almond milk, stevia, and melted coconut oil. Mix until smooth.

Gradually add the wet ingredients to the dry ingredients, stirring gently until the batter is smooth and well integrated.

Spoon the batter into the prepared donut pan, filling each mold about 3/4 full.
