Ingredients

  • 250 grams Whole wheat pastry flour
  • 150 grams Unsalted butter, cold and diced
  • 40 grams Sugar-free powdered sugar substitute (made of erythritol/stevia blend)
  • 1 teaspoon Salt
  • 60 ml Ice water
  • 1 teaspoon Vanilla extract

Directions

Step 1

In a large mixing bowl, combine the whole wheat pastry flour, sugar-free powdered sugar substitute, and salt. Mix well to incorporate evenly.

Step 2

Add the cold, diced butter into the flour mixture. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.

Step 3

In a small bowl, combine ice water and vanilla extract.

Step 4

Gradually stir the ice water and vanilla mixture into the flour-butter mixture, gently mixing with a fork until the dough begins to come together. Avoid overmixing to prevent a tough pastry.

Step 5

Turn the dough onto a lightly floured surface and gently knead it just enough to bring it into a ball.

Step 6

Flatten the dough into a disc, wrap it in cling film, and refrigerate for at least 30 minutes to allow the butter to firm up again before rolling out.

Step 7

Preheat the oven to 200°C (390°F).

Step 8

On a floured surface, roll out the chilled dough to about 1/4 inch thickness.

Step 9

Using a pastry cutter or knife, cut the dough into desired shapes or lines it into a tart pan as needed.

Step 10

Place the shaped pastry onto a baking sheet lined with parchment paper.

Step 11

Bake in the preheated oven for about 15-20 minutes or until the pastry is golden brown.

Step 12

Remove from the oven and let cool on a wire rack before serving.

Step 13

The pastry can be filled with sugar-free creams or enjoyed on its own as a delightful sugar-free treat.
