Ingredients

  • 500 grams Potatoes
  • 2 tablespoons Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 medium, finely chopped Onion
  • 1 inch, finely grated Ginger
  • 2 cloves, minced Garlic
  • 1 finely chopped Green chili
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon or to taste Salt
  • 100 ml Water
  • 2 tablespoons, chopped Fresh coriander leaves

Directions

Step 1

Wash and peel the potatoes, then cut them into small cubes of about 1-inch size.

Step 2

In a large pan or skillet, heat the oil over medium heat.

Step 3

Add mustard seeds and cumin seeds to the hot oil. Let them sizzle and pop for a few seconds.

Step 4

Add the finely chopped onion and sauté until they turn translucent.

Step 5

Stir in the grated ginger, minced garlic, and chopped green chili. Sauté for another minute until the raw aroma fades.

Step 6

Add the turmeric powder, red chili powder, and coriander powder. Stir well to coat the onion mixture with the spices.

Step 7

Add the potato cubes to the pan and mix them well with the spices and onion mixture.

Step 8

Season the potatoes with salt and pour in the water. Stir to combine.

Step 9

Reduce the heat to low, cover the pan, and let the potatoes cook for 15-20 minutes until they are tender. Stir occasionally to prevent sticking and ensure even cooking.

Step 10

Once the potatoes are cooked, remove the lid and increase the heat to medium-high. Toss the potatoes lightly to evaporate any remaining water and slightly crisp the edges.

Step 11

Garnish with fresh coriander leaves and serve hot with your choice of bread or rice.
