  • 1 inch Ginger
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 1 medium Red Bell Pepper
  • 1 medium Onion
  • 2 stalks Green Onion
  • 2 tablespoons Cilantro

Directions

Step 1

Cut the chicken breasts into bite-sized pieces. Set aside.

Step 2

Peel and core the pineapple, then cut it into small chunks. Save any juice that is released while cutting.

In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chicken pieces. Cook until the chicken is golden and cooked through, about 7-10 minutes. Remove and set aside.
