Ingredients

  • 100 grams Unsweetened dark chocolate
  • 100 grams Unsalted butter
  • 50 grams Granulated erythritol (or your choice of sugar substitute)
  • 2 pieces Large eggs
  • 2 pieces Egg yolks
  • 1 teaspoon Vanilla extract
  • 30 grams Almond flour
  • 0 Pinch of salt
  • 0 optional Cocoa powder for dusting

Directions

Step 1

Preheat your oven to 200°C (392°F). Grease four small ramekins and dust them lightly with cocoa powder if desired.

Step 2

In a small saucepan, melt the unsweetened dark chocolate and unsalted butter together over low heat, stirring constantly until smooth. Remove from heat and set aside to cool slightly.

Step 3

In a medium-sized bowl, beat the erythritol, eggs, and egg yolks together until the mixture becomes pale and slightly thickened.

Step 4

Add the melted chocolate mixture to the egg mixture and mix well until fully combined. Stir in the vanilla extract.

Step 5

Sift the almond flour and a pinch of salt into the chocolate batter and gently fold until smooth.

Step 6

Divide the batter evenly among the prepared ramekins, filling each about three-quarters full.

Step 7

Place the ramekins on a baking tray and bake in the preheated oven for about 8-10 minutes, or until the edges are firm but the centers are soft and molten.

Step 8

Remove the petit gateaux from the oven and let them cool for a minute. Carefully run a knife around the edges to loosen, then invert onto serving plates.

Step 9

Serve warm immediately for the best molten center experience. Optionally, you can dust with more cocoa powder before serving.
