Ingredients

  • 1 cup Almond flour
  • 0.25 cup Coconut flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter (softened)
  • 0.75 cup Erythritol
  • 1 teaspoon Vanilla extract
  • 3 unit Large eggs
  • 0.5 cup Unsweetened almond milk
  • 4 ounces Cream cheese (softened)
  • 2 tablespoons Heavy cream
  • 1 teaspoon Lemon zest
  • 0.5 cup Stevia-based confectioners' sweetener
  • 6 ounces Dark chocolate (sugar-free)
  • 1 tablespoon Coconut oil

Directions

Step 1

Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan and line with parchment paper.

Step 2

In a medium bowl, whisk together almond flour, coconut flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the softened butter and erythritol with an electric mixer on medium speed until light and fluffy, around 2-3 minutes.

Step 4

Add vanilla extract and one egg at a time, beating well after each addition.

Step 5

Incorporate the almond flour mixture into the wet ingredients, alternating with the almond milk, and mix until smooth and well combined.

Step 6

Pour the batter into the prepared baking pan and smooth the top with a spatula.

Step 7

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Allow the cake to cool completely in the pan on a wire rack.

Step 9

While the cake is cooling, prepare the cream cheese filling by beating the cream cheese, heavy cream, lemon zest, and stevia-based confectioners' sweetener in a small bowl until smooth and creamy.

Step 10

Once the cake is cool, use a sharp knife to cut it into 24 even squares.

Step 11

Using a piping bag or small spoon, spread a small amount of cream cheese filling onto half of the squares and sandwich with the remaining squares.

Step 12

For the chocolate coating, melt the sugar-free dark chocolate and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.

Step 13

Dip the top of each petit four into the chocolate mixture, allowing excess to drip off. Place on a wire rack set over a baking sheet to catch drips.

Step 14

Allow the chocolate to set fully at room temperature or refrigerate the petit fours for faster setting.

Step 15

Once set, serve and enjoy your delightful sugar-free petit fours!
