  • 2 sheets Puff pastry sheets
  • 200 ml Heavy cream
  • 250 ml Whole milk
  • 100 grams Granulated sweetener (erythritol or xylitol)
  • 4 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Lemon zest

Directions

Step 1

Preheat your oven to 220°C (428°F).

Roll out the puff pastry sheets on a lightly floured surface. Roll them into a log shape, and then cut into 1-inch discs.

Flatten each pastry disc into a circle and press them into the cups of a 12-cup muffin tin, ensuring the pastry goes up the sides of each cup.
