Ingredients

  • 1 cup Almond flour
  • 0.5 cup Cocoa powder, unsweetened
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Erythritol, powdered
  • 1 large Egg
  • 0.25 cup Butter, unsalted
  • 1 teaspoon Vanilla extract
  • 2 cups Sugar-free vanilla ice cream

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the almond flour, cocoa powder, baking powder, and salt.

In a separate bowl, beat together the erythritol and butter until creamy. Add the egg and vanilla extract, and mix until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Roll the dough into a log and refrigerate for 15 minutes to make it easier to handle.
