Rinse the sushi rice under cold water until the water runs clear, then combine it with 1.5 cups of water in a rice cooker or saucepan.
Cook the rice according to your rice cooker instructions or simmer on the stove with the lid tightly covered for about 20 minutes, until all the water is absorbed.
Once cooked, transfer the rice to a large bowl and gently stir in rice vinegar and salt. Let it cool to room temperature.
While the rice is cooling, prepare the fillings: slice the salmon into thin strips, julienne the cucumber and avocado, and peel and segment the orange.
Lay a sheet of nori on a bamboo sushi mat. Spread about a quarter of the prepared sushi rice evenly over the nori, leaving a 1-inch border at the top edge.
Place a few slices of salmon, cucumber, and avocado along the center of the rice.
Using the bamboo mat, lift the edge of the nori closest to you and begin to roll it over the filling, pressing gently to shape the roll.
Continue rolling until the fillings are completely enclosed and the sushi roll is sealed. Repeat with the remaining ingredients to make four rolls.
With a sharp knife, slice each sushi roll into 6 to 8 pieces.
Top each sushi piece with a segment of orange for a burst of natural sweetness.
Serve the sushi immediately with soy sauce on the side.
