Ingredients

  • 4 large red onions
  • 1 large green apple
  • 120 ml apple cider vinegar
  • 1 inch piece fresh ginger
  • 2 garlic clove
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 dried red chili
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Peel and thinly slice the red onions and set aside.

Step 2

Peel and grate the apple and set aside.

Step 3

Peel and finely chop the ginger and garlic.

Step 4

Heat the olive oil in a large pan over medium heat.

Step 5

Add the cumin seeds, mustard seeds, and dried red chili to the pan, stirring until the seeds start to splutter.

Add the chopped ginger and garlic, cooking for another minute until fragrant.

Add the sliced onions to the pan and reduce the heat to low. Cook the onions slowly for about 20 minutes, stirring occasionally, until they become soft and translucent.

Once the onions are well softened, add the grated apple to the pan.

Pour in the apple cider vinegar, and add the salt and black pepper. Stir well to combine.
