Ingredients

  • 1 cup Besan (chickpea flour)
  • 2 medium Onion, finely chopped
  • 3 tablespoons Oil
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 3 cups Water
  • 1 tablespoon Ginger-garlic paste
  • 2 small Green chilies, chopped
  • 2 tablespoons Coriander leaves, chopped

Directions

Step 1

In a medium-sized mixing bowl, add the besan and 1 cup of water. Whisk it well until you get a smooth, lump-free batter and set aside.

Step 2

Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, allowing them to crackle.

Step 3

Add the finely chopped onions and sauté until they become translucent and lightly golden.

Step 4

Stir in the ginger-garlic paste and chopped green chilies. Cook for another minute until the raw smell disappears.

Step 5

Add turmeric powder, red chili powder, and salt. Mix well to combine the spices with the onions.

Step 6

Gradually add the besan batter to the pan, stirring continuously to avoid lumps.

Step 7

Add 2 more cups of water and bring the mixture to a boil while stirring occasionally.

Step 8

Once it begins to boil, lower the heat and let it simmer for about 15 minutes, allowing the curry to thicken.

Step 9

Adjust the consistency by adding more water if needed, and check the seasoning. Add salt as per taste.

Step 10

Garnish with freshly chopped coriander leaves before serving.

Step 11

Serve hot with rice or Indian bread of your choice.
