Ingredients

  • 220 grams All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 180 milliliters Olive oil
  • 3 large Eggs
  • 240 milliliters Milk (or almond milk for dairy-free)
  • 2 teaspoons Vanilla extract
  • 1 whole Zest of a lemon
  • 120 milliliters Honey or maple syrup

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch (23 cm) round cake pan with olive oil, then line the bottom with parchment paper.

Step 2

In a large mixing bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In another bowl, whisk together the olive oil, eggs, and honey (or maple syrup) until well combined and slightly thickened.

Step 4

Mix in the milk and vanilla extract to the wet mixture. Stir in the lemon zest.

Step 5

Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix, as this can make the cake dense.

Step 6

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 7

Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Remove the cake from the oven and let it cool in the pan for about 10 minutes, then invert it onto a wire rack to cool completely.

Step 9

Once cooled, serve the cake as is or with a dusting of powdered sugar substitute if desired.
